Pasta Pomodoro

Ingredients
1 lb Bowl & Basket Specialty Spaghetti
3 tbs Bowl & Basket Specialty Olive Oil
1 large onion, chopped
4 cloves garlic, minced
4 cups chopped fresh local tomatoes
3 tbs chopped fresh basil leaves
Salt, to taste
pepper, to taste
Directions
- Bring a large pot of salted water to a boil. Once boiling, cook spaghetti according to package directions.
- Drain pasta but reserve ½ cup of pasta water for the sauce.
- While water is heating up, begin to make the Pomodoro sauce.
- Heat olive oil in a large skillet over medium heat.
- Add onion and cook until softened, about 6-8 minutes.
- Add garlic and cook for an additional minute before adding in chopped tomatoes.
- Cook on medium heat for 5 minutes before reducing heat and simmering sauce for an additional 10 minutes.
- Stir in basil leaves.
- Add pasta and reserved pasta water to the skillet with the Pomodoro sauce and toss gently to combine.
- Season with salt and pepper to taste.
